GARLIC NACHO SOUP WITH CHEESE AND TOFU


This is a Mexican dish, prepared with corn, fresh vegetables and tofu or paneer. This rich thick soup is best for your dinner.

GARLIC NACHO SOUP WITH CHEESE AND TOFU ( panner) Preparation Time: 20 minutes
COOKING TIME – 25 minutes
SERVING FOR- 4 persons

INGREDIENTS FOR GARLIC NACHO


  All purpose flour – 2 cup full
  Maize flour or corn flour – 3 tbsp
  Baking powder - 1 pinch
 Milk – 4 tbsp
  Salt to taste
 Red chili flakes – 1 tsp
  Garlic paste 2 tsp
  Oil for deep fry



INGREDIENTS FOR SOUP


  Boiled kidney beans (red) – 1 cup
  Sweet corn – ½ cup
  French beans – ½ cup chopped
  Onion chopped – ½ cup
  Fresh Spinach – 1 cup chopped
  Tomato puree – ½ cup
  Vegetable stock – 4 large cups
  Salt to taste
  Tofu or panner – 100 gm (cut into small cube)
  Garlic paste – 1 tsp
  Amul or Cheddar cheese cube – 1( grated)
  Mixed herbs – ½ tsp
  Chili flakes – 1 tsp

PROCESS FOR NACCHO

In a large pan ,mix corn flour and all purpose flour , salt , baking soda and garlic
Knead to a stiff dough, slowly add warm milk as per requirement
Knead well until smooth and leave for 1 hour
After an hour knead dough again and make small balls
Roll the balls on floured board, roll as thin as you can
Prick with a fork all over it so it does not puff on frying
Cut into 4 pieces, deep fry on medium heat
All nachos will be golden in color should not over fry
Transfer on kitchen pepper or napkins
Your crispy nachos are ready

PROCESS FOR SOUP

Heat 2 tbsp oil in a large stoke pot or heavy bottom pan
Add garlic paste, onion, cook until onions are light brown, add spinach , cook till tender
Add corn , kidney beans and French beans, cover and cook 2 minutes
Now add tomato puree and vegetables stock, give 1 boil, simmer for 10 minutes
Sprinkle mixed herbs, seasoning with salt and chili flakes, tofu and grated cheese
In a bowl put 4 nachos, pour hot soup
Break few nachos and sprinkle on the soup
Serve hot
