CLUB SANDWICH VEGETARIAN


A three layered vegetable sandwich recipe, homemade, quick and easy to prepare.

It is ideal for breakfast, snacks or meal.

PREPARATION TIME = 10 MINUTES
COOKING TIME = 10 MINUTES
SERVED = 4 PERSONS

INGREDIENTS


Brown bread - 8 slices ( cut from middle portion by a sharp knife to get triangular shaped pieces).
Veg mayonnaise to spread - about 5 to 6 tsp
Finely chopped vegetables - ( carrot, cabbage, tomato, onion, French beans, green bell pepper, cauliflower - 2 large cups, you can use any vegetables according to your choice)
Soy chunks boiled and chopped - 1 medium cup
Chopped lettuce - 1 tbsp
Finely chopped mint leaves - 1 tsp
Vegetable oil or any cooking oil - 1 tsp
Salt and pepper for seasoning
Herb or garlic butter or regular butter - 2 tbsp

N.B. In place of paneer, grated cheese with other ingredients can also be used


PROCESS

In a pan, heat oil, add all vegetables, soy chunks, paneer or cheese about 3 tbsp, cook well on medium heat, add salt, so the moisture of the vegetables come out and let the mixture dry.
Add pepper, lettuce and mint leaves, toss well, remove from pan.
Add butter on a grill pan, let it melts, toast bread slices.
Apply mayonnaise on the top of each slices, place the mixture, place other slices and again repeat the process with the other slice to make sandwich, make three layers of each one.
You can trim the edges of a sandwich.
Serve along with French fries or potato chips.
