KARAI CHICKEN – SPICY HOT CHICKEN RECIPE


It is a dry preparation of chicken with hot red chilies. This dish is easy to cook and have great nutritious value of potato, tomato and carrot.

PREPARATION TIME – 20 MINUTES
COOKING TIME- 25 MINUTES
SERVE AS –4 PERSONS

INGREDIENTS

Chicken – 500 gm cut into small size pieces
2 Large onion, cut into dice shape
Ginger & garlic paste – 3 tbsp
Whole dry red chili – 6
Fresh tomato – 200 gm (cut in to pieces)
Potato – 8 small size peeled
Carrot – 1 large cut into match sticks
Ginger – 20 gm cut into match sticks
Fresh cream – ½ cup
Dry roast fenugreek seeds – ½ tsp
Dry roast coriander seeds – 1 tbsp
Dry roast fennel seeds – ½ tbsp
Cooking oil – 6 tbsp
Salt to taste

INGREDIENTS FOR TEMPERING

Fenugreek seeds – few
Green chili - 2

PROCESS



Wash chicken pieces, marinate with salt & ginger , garlic paste for ½ an hour
Grind together all dry roast spices, keep aside.
Heat oil in a pan or karai, add ingredients of tempering.
Add onion and red chilies, fry on high flame to get a crispy brown onion & chili fry.
Add potatoes, lightly fry.
Add chicken, simmer and cover for at least 10 minutes.
Add tomatoes, mash with spoon, cover and cook until chicken pieces become tender and oil starts to separate from pan.
Add cream and cover at low heat for 2 minutes. Sprinkle ginger and carrot, dry roast powdered spices.
Remove from fire and cover for 3 to 5 minutes.
Now serve with steamed rice or Indian bread.
