MUTTON SHORBA RECIPE


Shorba is a Middle East non vegetarian soup that is cooked with mutton or lamb meat. In Indian cuisine, its ingredients are changed. There are lots of variations found in India like tomato Shorba, dal or pluses Shorba. Here, this recipe is prepared by following the traditional cooking process. Though, traditionally, big pots are used to cook this dish but here, it is cooked with pressure cooker. It is a slow procedure for food preparation that takes almost 1 to 2 hours, but in this recipe article, you will learn how to cook it within half an hour.

PREPARATION TIME – 10 MINUTES
COOKING TIME- 30 MINUTES
SERVE FOR 4 PERSONS

INGREDIENTS

Mutton -500 gm cut into medium size pieces
Ripe red tomatoes - 100 to 200 gm ( chopped)
Medium size onion - 100 gm (chopped)
Ginger & garlic paste - 4 tbsp
Coriander powder - 3 tsp
Red chili powder - 2 tbsp
Turmeric powder - 2 tsp
Pepper powder - 1 tsp
Bay leaves - 2
Mint Leaves - 1 tbsp
Cooking oil - 6 tbsp
Rock salt as per taste

PROCESS



In a pressure cooker, put half litre water, salt and mutton.
Put together onions, tomatoes, bay leaves, and all powder spices.
Cook in Pressure cooker for 5 minutes or until first whistle made, reduce the hit.
Cook in medium hit, wait for almost 5 to 6 whistles.
Remove the cooker from hit and let pressure drop, when the presser will drop completely, uncover and again hit the cooker without lid, try to mash the tomatoes with a ladle, let the remaining cooking juice becomes dry, put oil and high the flame, cook the mutton, when oil comes out from the preparation, add ginger & garlic paste, all powder spices, add 1 cup water or as per your requirement to maintain the thickness of the soup.
Add mint leaves, cook for 5 minutes or wait for first boil.
Serve hot with nun or roti.
