RAJASTHANI GOVIND GATTE RECIPE


This recipe is adopted from Rajasthani royal cuisine, purely vegetarian curry with dry fruits. It is rich in flavor and little spicy.

PREPARATION TIME – 10 MINUTES
COOKING TIME- 20 MINUTES
SERVE FOR 4 PERSONS

INGREDIENTS

Channa dal (Bengal gram) - 100 gm socked in hot water for over night
Besan (gram flour)- 1 cup
Green chili - 4 to 6
Chopped cashew nuts - 2 tsp
Walnut chopped - 1 tsp
Dry whole red chili - 3
Curry leaves - 6 to 8
Cumin seeds - 1 tsp
Cumin powder - 1 tsp
Asafetida -1 pinch
Refine oil for frying
Salt to taste
Bikanir bujia - 3 tbsp
Sour curd - 3 tbsp
Deshi ghee - 2 tbsp
Turmeric powder - 1 tsp

PROCESS



Make a fine paste of Bengal gram with 2 green chilies and salt without water, beat well, add gram flour and make a dough, add little amount of oil slowly to make a dry paste.
Roll it in round shape, spread dry fruits in a line and fold like Swiss roll, cut into triangle shape and transfer into a heavy bottom pan, add water & boil until it becomes soft, it takes approximately 5 minutes, then transfer into hot oil carefully to fry.
In another pan, heat ghee, temper curry leaves, cumin seeds, asafetida and red chili.
Add turmeric powder, cumin powder, salt, chilies and little amount of water, add curd and mix well.
Add water and fried gatte, you can add little sugar, bring to boil, spread bujia and simmer for 5 minutes, spread ghee.
Serve with roti or rice.
